An easy and healthy Bacon Fried Rice Recipe that is very much like a Thai fried rice, but with bacon. This recipe is great for the whole family and for any meal of the day.
Cook The Bacon FirstAfter your rice has been cooked, heat up your cast iron skillet to prepare it for placing the bacon on. Get the bacon fully cooked before removing.
300 g bacon
Add Garlic And TallowLeaving the bacon fat behind, add an additional spoonful of tallow along with the garlic (Leave a bit of garlic aside for adding in fresh at the end). Let the garlic cook in this skillet with the oil/fat, but don't let the fat burn. Once the flavor's been brought out of the garlic and it's well-browned, get the veggies in ASAP.
1 whole garlic, 1 tbsp beef tallow
Add The VegetablesAdd in the vegetables before your bacon grease starts to burn and once your garlic is browned. We used diced mushrooms, white onions and carrots and chives. Leave some chives to add on top fresh at the end.Stir consistently, ensuring these don't stick or start to burn. We want to keep things moving and juicy as once the carrot softens and has soaked up the good flavors from the bacon and garlic, it's time for the egg.
Add the Egg Add your egg (or eggs) in at this point. Crack the egg straight into the skillet using the grease that still remains. If it's too dry at this point you'll need to add more tallow before adding the egg in. View our video to see this part in detail. Whatever you do, don't burn the egg or anything in the skillet. Lower the heat if it's getting too dry. Or add in more fat/good oils to save it from burning in the meantime.

Add the White RiceOnce the egg is cooked, so after about 30 seconds, add in the cooked white rice. Stir this all together for a minute. Once it's all well stirred-together, the toppings are added before the recipe is finished.
3 cups white rice
Add in the Flavorings and ToppingsSprinkle some of the fresh chopped garlic that was set aside right on top. Followed by some freshly chopped chives, then a pinch of salt along with a healthy wallop of onion powder.
Optional, but almost not: LIMEA bacon fried rice doesn't NEED lime, but normally I must have some lime wedges with my Thai fried rice. However, bacon fried rice recipes would be the exception. That being said, this recipe still gets enhanced with a fresh squeeze of lime at the time of eating.
Alternatives to Tallow:Besides bacon fat, a tasteless coconut oil or any cooking oil of your choosing will work. The main idea is just to stay away from most seed and vegetable oils.How to Reheat: To reheat the bacon fried rice, add cooking oil to the skillet and re-fry it a bit until it's hot. I highly recommend against using a microwave, for this dish especially (but, for all dishes).
